Recipe for Bojac

Last Friday’s publication’s article “If it ain’t got Bojac, it ain’t  potato salad” caught my attention
immediately.  I also was user of Bojac when it went out of business  and for many years tried all the
tricks to find something to replace it (or a combination of ingredients).
 
AMAZINGLY I came across a recipe for Bojac Dressing and now have a full jar  (or jars in summer)
made ahead and in the frig.  It was found in a paper and I have now forgotten which one or where!
Here it is!
 
 BOJAC DRESSING
 
2 cup water                           1 tsp salt
2 cup sugar                           5 tbsp. all purpose flour
1 cup vinegar                        4 tsp. dry mustard
4 eggs                                    1/4 cup butter
 
Combine water, 1 cup sugar, vinegar....bring to a boil
Blend together 1 cup sugar, salt, flour, mustard, eggs
Slowly add this to hot sugar mixture.
Reduce heat to medium, cook until thickened.  Remove from heat, add butter,
stir until melted.
Cool and store in air-tight jar in refrig.
